Gazpacho

It’s #wellnesswednesday and we’re making GAZPACHO!!

We’ve had Gazpacho on the brain lately (you can thank this heatwave) so we decided we’d make a fresh batch and take you along for the ride!! This is one of our all-time favorite Spanish recipes and it has such a special place in our hearts. Let’s make it together ❤️

🍅🥒 GAZPACHO 🥒🍅
3 Cups of Cucumber, peeled and cubed
1 Cup of Red Bell Peppers
1 Clove of Garlic
3 Cups of Tomatoes (large chunk)
1/2 Cup Yellow Onion
3/4 Cup of Lime Juice
1/4 Cup of Extra Virgin Olive Oil
1/2 Cup of Cilantro
1 TBSP of Sea Salt

Blend all ingredients in Vitamix until creamy. Best if served chilled. Optional garnish with sliced avocado, cilantro, and an olive oil drizzle. This gazpacho stores great in the fridge for up to 5 days.
